Kara and I hit the farmers market this weekend and the resulting bounty of squash, onions, and tomatoes led to a delicious salad. Recipe after the break.
Squash:
4 large squash (2 zucchini, 1 yellow squash, 1 yellow zucchini maybe?), chopped
1/2 large onion, chopped
1/2 red onion, chopped (you could use a whole one and omit the yellow onion)
1 tbsp fresh minced rosemary
1tbsp olive oil
Sweat the onion in the oil
Turn up the heat and cook the squash moving rapidly
Add rosemary towards the end
Salad:
Mixed greens
Tomatoes (ours were cool heirloom ones from the farmers market)
Chopped Walnuts (not pictured, but added later to great effect - pine nuts would be good too)
Slices of parmesan cheese
Dressing:
Homemade lemon vinaigrette
1/2 cup olive oil (about half and half good stuff and regular flavorless)
1/4 cup lemon juice (fresh squeezed)
1tbsp spicy brown mustard
1 shallot
fresh ground pepper
Combine everything but the shallot in a blender and let it go for 30 seconds.
Add shallot and pulse 'til it's chopped in.
